When pit master Mark Timber opened Double B’s BBQ in 2014, his business plan was beautifully simple: create barbecue so good that people would drive 18 miles in 100-degree weather down a dirt road just to try it.
While Greenfield Avenue in West Allis might not be a dirt road, the proof definitely remains in the pork – and the brisket, ribs, and everything else coming out of their hickory smokers.
This family-owned restaurant has quickly earned its stripes as Wisconsin’s top BBQ destination, officially voted #1 BBQ in the state for 2024.
Mark brings over 40 years of experience to the smoker, having learned from some of Milwaukee’s biggest culinary names, and his devotion to three essential elements – good meat, proper fire, and attention to detail – shows in every perfectly crafted dish.
BBQ Highlights & Menu Must-Tries
The Brisket: This is where Double B’s truly shines. You’ll find thick-cut slices that pull apart effortlessly with just a fork, featuring that coveted smoke ring and perfect bark.

Keep Exploring →The meat stays incredibly moist and tender without being fatty, maintaining its texture even after sitting on your plate for several minutes. The seasoning blend of chile, black pepper, and sugar creates an exceptional flavor profile that lets the hickory-smoked beef take center stage.
Baby Back Ribs: These meaty ribs receive the full treatment with their house spice blend before being smoked to perfection. You’ll get that ideal balance where the meat has just enough chew without falling off the bone – exactly how proper BBQ ribs should be served. The cherry wood smoking process gives them a lighter, more delicate smoke flavor that allows the pork’s natural taste to shine through.
Burnt Ends: Double B’s takes brisket point, coats it in their homemade Kansas City-style sauce, then returns it to the smoker for a second round of cooking. The result is incredibly sticky, soft nuggets of caramelized beef that practically melt in your mouth, served with crispy onions on top for added texture.
Pulled Pork: The shoulder gets smoked until it’s perfectly tender and juicy, with portions that are generous enough to satisfy any appetite. The lighter seasoning approach highlights the natural pork flavors while the cherry wood adds subtle smokiness without overpowering the meat.
Bacon Balls: This popular appetizer features bacon wrapped around seasoned meat, creating a hearty starter that keeps customers coming back. They’re substantial enough to share but delicious enough that you might want to keep them all to yourself.
