Charleston’s Secret To The Best Brisket Outside Of Texas Is Hidden In Plain Sight

When John “Meat” Lewis packed up his custom-welded smokers and left Austin for Charleston in 2015, barbecue enthusiasts knew something special was coming.

This Texas-born pitmaster had already made his mark at legendary spots like Franklin Barbecue and La Barbecue, and now he was bringing authentic Central Texas barbecue to the Lowcountry.

Since opening in 2016, Lewis Barbecue has become a must-visit destination that consistently draws lines of eager customers ready to experience what many consider the best brisket outside of Texas.

Menu Highlights

The Legendary Brisket: This is the flagship meat and it’s the best brisket many have had outside of Texas. The fat layer becomes rich, succulent, and unctuous on the pit, adding both flavor and moisture to the beef without being unpleasantly fatty. You’ll get a mix of fatty and lean cuts, both smoked to perfection with a beautiful bark that seals in all those smoky flavors.

Texas Hot Guts Sausage: The hot guts took things to the next level with a perfect snap and great flavor, with just a bit of a kick. This house-made sausage is absolutely outstanding and what makes Lewis Barbecue worth going to. It’s mostly beef with a little bit of pork and a nice kick of heat, smoked on their custom sausage smoker.

Pork Spare Ribs: These lightly glazed ribs are big and extra meaty, falling perfectly off the bone. While the brisket gets most of the attention, these ribs hold their own with excellent flavor and texture.

Green Chile Corn Pudding: This is one of the best non-traditional barbecue sides you’ll ever have. It’s not cooked thick but rather around 1/2-3/4″ thick, dry enough not to run but still just moist enough to be sublime, and the green chilies make it special.

Pulled Pork: This is exceptional pork barbecue that’s moist and flavorful, rich in flavor without needing any BBQ sauce. You can taste the smoke flavor perfectly, and it’s simply the best pork many have tried in Charleston.

Atmosphere & Décor

Texas-Style Setup: The place is set up in classic Texas style with meats sold by the pound and served on butcher paper. You order at the counter just like in Texas, and the meat is cut and weighed right in front of you.

Indoor and Outdoor Space: Inside you’ll find a huge bar and backyard patio to keep you entertained year-round. There’s an order counter, a bar, fair amount of indoor seating and ample outdoor seating.

The Smokers: The first thing you’ll notice when you pull up are the massive, custom-made smokers, welded by the pitmaster himself. These aren’t just for show – they’re the heart of what makes this place special.

No-Frills Efficiency: They’re set up to split the line into two, so even when there’s a wait, it’s negligible. The focus is clearly on the food, not fancy décor.

Other Considerations

Pricing: It’s pretty expensive, but that’s to be expected for most anything in downtown Charleston. However, you don’t have to buy a whole pound – you can buy one slice of brisket and one rib if you want. The quality justifies the cost for most visitors.

Family-Friendly: The restaurant is good for kids and allows dogs, making it a great spot for families looking to experience authentic Texas barbecue.

No Reservations: They don’t take reservations, so be prepared for a potential wait during peak times. However, the efficient ordering system keeps things moving.

I’ve lived in Asheville for the past 12 years, but North Carolina has always felt like home. And I've always loved traveling! I enjoy taking the long way just to see what’s out there. When I’m not writing, I’m out with my old Nikon, digging through record bins, or planning my next road trip.
