This Tiny 36-Seat Denville Restaurant Is Worth The Wait For Tasty Handmade Pasta

Published: October 12, 2025

A former laundromat has been transformed into one of Morris County’s most sought-after dining destinations.

The Pasta Shop opened its doors in February 2018, turning a 70-year-old Denville landmark into a culinary haven where handmade pasta takes center stage.

Co-owned by Chef Tommy Pollio and Sergio Sciancalepore (of the beloved Sergio & Co. Italian Specialties), this intimate 36-seat eatery has earned a devoted following that regularly endures wait times stretching past two hours on weekends.

The old neon sign from the original laundromat still glows out front, a nostalgic nod to the building’s history and to Chef Tommy’s teenage years when he’d warm up there during late-night walks home from work.

The restaurant operates on a first-come, first-served basis with no reservations accepted. You’ll add your name to a waitlist, and when demand exceeds capacity for the evening, they close the list entirely.

But here’s the thing: the wait is absolutely worth it.

From the moment you step inside, you’ll see fresh pasta being crafted right before your eyes, a visual promise of the homemade excellence that’s about to hit your table.

Menu Highlights You Can’t Miss

The Famous Mozzarella Sticks: These aren’t your ordinary freezer-section sticks. The Pasta Shop hand-stretches their own mozzarella, encases it in a light, crunchy coating, then showers it with grated Parmesan before serving it alongside a perfectly spiced tomato sauce.

The result?

Golden-brown pillows of cheese with a satisfying crunch that gives way to molten mozzarella inside. This signature appetizer has become one of the restaurant’s most beloved dishes.

Rigatoni Alla Vodka: This crowd-pleaser appears on tables throughout the dining room. The sauce strikes a beautiful balance between creamy and bright, clinging to each tube of perfectly al dente pasta.

Many opt to add prosciutto for extra richness, and the combination is nothing short of spectacular. The pasta itself has that tender-yet-toothsome texture that only comes from fresh, handmade noodles.

Pappardelle Bolognese: Wide ribbons of fresh pasta cradle a slow-cooked ragu of beef and pork that’s been simmered to tender perfection. The sauce has depth and complexity, coating each strand without overwhelming it. This dish exemplifies the restaurant’s philosophy: quality ingredients prepared simply and cooked with care.

Squid Ink Pasta (Spicy King Crab): For the adventurous, this jet-black spaghetti gets tossed with crab meat in a spicy tomato sauce. The dramatic presentation is matched by bold flavors—briny, spicy, and utterly satisfying. The striking black pasta has developed quite a reputation among pasta enthusiasts.

Linguine and Clams: Small, tender clams arrive plump with natural liquor, swimming in a beautifully emulsified sauce of olive oil, crushed garlic, chili flakes, and fresh lemon. The pasta soaks up every bit of that briny, garlicky goodness. It’s a masterclass in simplicity done right.

Chicken Parmigiana: Even this Italian-American classic gets the elevated treatment here. The chicken stays juicy beneath a crispy coating, topped with just the right amount of marinara and melted cheese. Served over pasta, it’s comfort food at its finest.

Garlic Bread: Don’t skip this starter. The bread comes perfectly toasted with garlic flavor that’s present but not overpowering. It’s the ideal vessel for sopping up any sauce left on your plate.

Sergio’s Meatballs: Light, moist, and flavorful, these meatballs simmer in tomato sauce with fresh basil. They’re a tribute to the Italian traditions that inspired this restaurant.

Cannoli & Nutella Banana Bread: Save room for dessert. The cannoli features a shell that stays crispy even when filled with sweet, creamy ricotta. The Nutella banana bread offers rich chocolate-hazelnut decadence with moist cake underneath.

The Atmosphere & Setting

Intimate Space: The restaurant seats just 36 people inside, which explains those legendary wait times. The compact dining room fills quickly, creating an energetic buzz that makes you feel like you’re in on something special. Despite the small footprint, the layout allows for a surprisingly comfortable dining experience.

Open Kitchen Display: As you enter, you’ll immediately spot the pasta-making station where fresh noodles are rolled out throughout service. The open kitchen concept lets you watch the culinary magic happen, with gleaming stainless steel kept impeccably clean—a testament to the team’s attention to detail.

Casual Yet Classy Vibe: The decor strikes a balance between neighborhood Italian spot and refined eatery. The atmosphere feels welcoming rather than stuffy, with lighting that sets a warm, inviting mood. Families feel comfortable here, as do date-night couples.

Outdoor Seating Option: During pleasant weather, the patio provides additional seating and a relaxed alternative to the indoor dining room. It’s a lovely spot to enjoy your meal al fresco while soaking in the downtown Denville atmosphere.

Downtown Denville Location: The restaurant sits right in the heart of Denville’s charming downtown area, making it easy to explore local shops and grab a drink at nearby establishments while waiting for your table.

Other Considerations

Pricing Perspective: Expect to pay moderate prices that reflect the quality you’re getting. Appetizers run around $8-$9, with entrees typically ranging from $16-$18. Given the fresh, handmade pasta and premium ingredients, the value is excellent—you’re getting restaurant-quality Italian food that rivals much pricier establishments.

The Wait Time Reality: Weekends can mean 90-minute to 3-hour waits, especially if you arrive after 5 PM. Weekdays offer shorter waits, with Tuesday through Friday being your best bet for a quicker table.

The restaurant uses a text alert system, so you can explore downtown Denville while waiting. Pro tip: They’ll give you about 10 minutes to return once your table is ready.

Takeout Alternative: Can’t handle the wait?

Takeout is a solid option. Many diners grab their order and enjoy it at nearby picnic tables or head across the street to the brewery to eat there. The food travels well, though dining in does offer the full experience.

BYOB Advantage: The restaurant is BYOB, which keeps costs down and lets you bring your favorite wine or beer. They do sell local wines from Old York Vineyards if you prefer to purchase on-site. The BYOB setup pairs perfectly with the moderate food prices.

Family-Friendly Setup: Kids are more than welcome, and you’ll see plenty of families enjoying meals together. The portions are generous, and the classic Italian flavors appeal to all ages.

Gluten-Free Options: The restaurant makes fresh gluten-free pasta on a dedicated machine, cooked in separate pots. For those with celiac disease or gluten sensitivity, this level of care is a game-changer. Takeout containers for gluten-free orders come clearly labeled.

No Reservations Policy: This is strictly first-come, first-served. Plan accordingly, arrive early to get on the list, and know that once they’re fully committed for the evening, no new names are accepted.

Limited Hours: The restaurant is closed Sunday and Monday. Tuesday through Friday, they open at 3 PM. Saturday service begins at noon. These limited hours add to the exclusivity but also mean you need to plan your visit carefully.

Parking Situation: Street parking is available in downtown Denville, though it can fill up during peak dining hours. Give yourself a few extra minutes to find a spot, especially on busy weekend evenings.
