What started as a school counselor’s passion project at local farmers markets has transformed into one of New Jersey’s most talked-about bakeries.
Bread & Culture Artisan Bakery opened its doors on Main Street in February 2023, bringing Paulo and Michelle Velasco’s sourdough obsession to the heart of Flemington.
This isn’t your average bakery—95% of the menu revolves around naturally leavened sourdough, from the breads to the pastries, each item benefiting from a meticulous 12-hour levain followed by 15 hours of cold-proofing.
The dedication to craft shows in every bite. Using only stone-milled flours, local whole grains, butter imported from France, and organic ingredients, this small-batch bakery has earned a devoted following.
People drive over an hour regularly—some even make the trek from Staten Island every two weeks—just to stock up on their favorite loaves and pastries.
