Award-winning pastry chef Warda Bouguettaya transforms childhood memories from her mother’s Algerian kitchen into extraordinary confections that have captured Detroit’s heart and earned national acclaim.
This intimate Midtown patisserie represents a culinary journey spanning three continents, where traditional North African flavors merge seamlessly with French technique and Southeast Asian inspiration.
In 2022, Bouguettaya became the first Detroit chef in nearly 30 years to win a James Beard Award, taking home Outstanding Pastry Chef honors while simultaneously earning recognition as one of Food & Wine’s Best New Chefs.
What began as selling Algerian desserts at Detroit’s Eastern Market has evolved into something truly extraordinary. After studying at the prestigious Restaurant-École Institut Paul Bocuse in Shanghai, Bouguettaya returned to Detroit with a vision of creating what she calls a “borderless pastry shop” – a space where her Algerian heritage, French training, and Asian travels converge into something entirely unique.
Signature Pastries & International Delights
Makrouds: Traditional Algerian and Tunisian pastries made using semolina flour with fillings like orange blossom water, cinnamon and clove-spiced date paste, then dipped in orange blossom syrup. These delicate gems showcase Bouguettaya’s North African roots with their distinctive diamond shape and aromatic sweetness that transports you straight to the Mediterranean.
